  • 2 pounds boneless pork shoulder

  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 14.5-ounce can fire-roasted diced tomatoes, with juice
  • 2 pieces chipotle peppers in adobo sauce, chopped
  • 2 tablespoons fresh lime juice
  • 1 cup cilantro, chopped
  • 6 pieces soft sandwich rolls
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon lime zest

Directions

Step 1

Preheat your oven to 300°F (150°C).

Combine salt, black pepper, smoked paprika, cumin, and garlic powder in a small bowl. Rub the spice mixture all over the pork shoulder.

In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side. Remove the pork and set aside.
