Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves minced garlic
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 14.5 ounces diced tomatoes with green chilies (undrained)
  • 8 ounces tomato sauce
  • 3 cups beef broth
  • 2 cups elbow macaroni (uncooked)
  • 1 cup black beans (drained and rinsed)
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup chopped cilantro (optional, for garnish)

Directions

Step 1

Heat a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Step 2

Drain any excess grease from the pan and return the beef to the skillet. Add the diced onion, green bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

Step 3

Stir in the chili powder, ground cumin, paprika, salt, and black pepper. Cook for 1-2 minutes to toast the spices and enhance their flavor.

Step 4

Add the diced tomatoes with green chilies, tomato sauce, and beef broth. Bring the mixture to a boil.

Step 5

Stir in the elbow macaroni, reduce the heat to medium-low, and cover the skillet with a lid. Simmer for 10-12 minutes, stirring occasionally, until the macaroni is tender and cooked through.

Step 6

Once the pasta is cooked, stir in the black beans and frozen corn. Simmer for an additional 2-3 minutes until the beans and corn are heated through.

Step 7

Turn off the heat and mix in 1 1/2 cups of shredded cheddar cheese and the sour cream until smooth and creamy.

Step 8

Serve hot, garnished with the remaining cheddar cheese and optional chopped cilantro. Enjoy your Fiesta Chili Mac!
