  • 1.5 cups Shredded Mexican blend cheese
  • 0.5 cup Sour cream
  • 0.25 cup Chopped fresh cilantro
  • 0.25 cup Chopped green onions
  • 1 as needed Olive oil spray

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Spray the wells of a standard 12-cup muffin tin with olive oil spray.

Step 3

Press a wonton wrapper into each muffin cup, molding it to fit snugly to create the taco cup base.

Step 4

Lightly spray the wonton wrappers with olive oil and bake for 5-7 minutes until lightly crispy, then remove them from the oven.

Step 5

In a large mixing bowl, combine the shredded chicken, taco seasoning, drained diced tomatoes, and black beans. Mix until well-coated and evenly distributed.

Spoon about 1-2 tablespoons of the chicken mixture into each pre-baked wonton cup.

Top each cup with a generous sprinkle of shredded Mexican blend cheese.

Step 8

Return the muffin tin to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the taco cups from the oven and let them cool for 2-3 minutes in the tin before carefully lifting them out.

Step 10

Garnish each taco cup with a small dollop of sour cream, and a sprinkle of cilantro and green onions.
