Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 1 cup Uncooked white rice
  • 1.5 cups Chicken broth
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 can (15 oz) Corn, drained
  • 1 cup Salsa
  • 1.5 cups Shredded Mexican blend cheese
  • 2 tablespoons Chopped green onions
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with cooking spray or olive oil.

Step 2

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 3

Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for 2-3 minutes per side until golden brown. Remove from heat and set aside.

Step 4

Rinse the uncooked rice under cold water to remove excess starch, then spread it evenly over the bottom of the prepared baking dish.

Step 5

Pour the chicken broth evenly over the rice. Arrange the black beans and corn evenly on top of the rice layer.

Step 6

Add the salsa over the beans and corn, spreading it out into an even layer.

Step 7

Place the seared chicken breasts on top of the casserole.

Step 8

Cover the baking dish tightly with aluminum foil and bake for 30 minutes in the preheated oven.

Step 9

After 30 minutes, remove the foil and sprinkle the shredded Mexican blend cheese evenly over the casserole.

Step 10

Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the casserole from the oven and allow it to rest for 5 minutes before serving.

Step 12

Garnish with chopped green onions and fresh cilantro if desired. Serve hot and enjoy!
