Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons butter
  • 1 medium yellow onion, finely diced
  • 1 medium red bell pepper, finely diced
  • 2 cloves garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 10 ounces canned diced tomatoes with green chilies (e.g. Rotel), drained
  • 1 cup frozen corn kernels, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and set aside.

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion and red bell pepper, and sauté until softened, about 5 minutes.

Step 3

Stir in the minced garlic, ground cumin, and chili powder. Cook for 1-2 minutes until fragrant.

Step 4

Add the drained diced tomatoes with green chilies and thawed corn kernels to the skillet. Stir to combine and cook for an additional 3-4 minutes.

Step 5

Reduce the heat to low and stir in the cooked rice. Mix until the rice is well coated with the vegetable mixture.

Step 6

Gradually add the shredded cheddar cheese and Monterey Jack cheese, stirring continuously, until melted and evenly distributed.

Step 7

Season the dish with salt and black pepper to taste, and sprinkle with chopped fresh cilantro just before serving.

Step 8

Serve warm and enjoy your Fiesta Cheese Rice as a side dish or a flavorful main course.
