  • 1 cup Frozen corn kernels
  • 2 cups Cooked white or brown rice
  • 2 cups Shredded cheddar cheese
  • 0.25 cup Chopped fresh cilantro
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Add the garlic and cook for an additional minute until fragrant.
