Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 2 tablespoons Cornstarch
  • 3 tablespoons Vegetable oil
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, minced
  • 1 unit Red bell pepper, diced
  • 2 cups Broccoli florets
  • 1 cup Cashews, unsalted
  • 1 tablespoon Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Hoisin sauce
  • 1.5 tablespoons Sriracha
  • 1 teaspoon Rice vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, sliced
  • 2 cups White or jasmine rice, cooked

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and toss with the cornstarch in a medium bowl until evenly coated.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Step 3

In the same pan, add the remaining 1 tablespoon of vegetable oil. Sauté the minced garlic and ginger for about 30 seconds until fragrant.
