Ingredients

  • 400 grams fettuccine
  • 2 tablespoons olive oil
  • 2 pieces garlic cloves, minced
  • 180 grams canned tuna in olive oil
  • 200 milliliters heavy cream
  • 1 tablespoon lemon juice
  • 50 grams grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic.

Step 3

Add the canned tuna (along with its oil) to the skillet. Break the tuna into smaller pieces using a wooden spoon and cook for 2-3 minutes.

Step 4

Reduce the heat to low and stir in the heavy cream, lemon juice, and half of the grated Parmesan cheese. Mix well to combine.

Step 5

Season the sauce with salt, black pepper, and red chili flakes (if using). Stir well and let the sauce simmer gently for 3-4 minutes.

Step 6

Add the cooked fettuccine to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a splash of the reserved pasta cooking water to achieve your desired consistency.

Step 7

Remove the skillet from heat. Garnish the pasta with the remaining Parmesan cheese and the chopped parsley.

Step 8

Serve immediately and enjoy your hearty Fettuccine in Tuna Sauce!
