Ingredients

  • 2 whole Avocados
  • 100 grams Feta cheese
  • 6 pieces Cherry tomatoes

  • 0.25 whole Red onion
  • 2 tablespoons Fresh parsley
  • 1 whole Lemon
  • 2 teaspoons Olive oil
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Cut the avocados in half lengthwise and carefully remove the pits. Use a spoon to gently scoop out a small amount of flesh from the center of each half to create a larger cavity for the stuffing. Set the avocado halves aside.

Chop the scooped-out avocado flesh into small pieces and place it in a mixing bowl.

Dice the cherry tomatoes, cucumber, and red onion into small pieces. Add them to the mixing bowl with the chopped avocado.
