Ingredients

  • 1 pound beef sirloin steak
  • 4 ounces feta cheese
  • 1 cup baby spinach leaves
  • 2 tablespoons fresh parsley
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 pieces toothpicks or kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the beef sirloin steak on a clean cutting board and use a sharp knife to slice it into thin strips, approximately 4 inches wide and 6 inches long. If the slices are thick, use a meat mallet to gently pound them thinner to about 1/4 inch.

Step 3

In a small bowl, combine feta cheese, finely chopped parsley, and minced garlic. Mix well to form the stuffing.

Step 4

Lay a beef strip flat and layer a small handful of baby spinach leaves on top. Add a tablespoon of the feta mixture onto one end of the strip and sprinkle lightly with paprika.

Roll the beef up tightly around the filling, starting from the end with the feta mixture. Secure the roll with a toothpick or tie it with kitchen twine. Repeat for all strips.
