  • 400 grams fusilli pasta

  • 200 grams cooked chickpeas, rinsed and drained
  • 400 grams tomato passata
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red chili flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 grams fresh basil leaves, chopped
  • 50 grams Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fusilli pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the cherry tomatoes, red bell pepper, and zucchini to the skillet. Cook for 5-7 minutes, stirring frequently, until the vegetables begin to soften.
