Ingredients

  • 2 large Fennel bulb
  • 1 large Carrot
  • 0.5 medium Red onion
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Trim the stalks and fronds from the fennel bulbs. Reserve a few of the feathery fronds for garnish, if desired.

Cut the fennel bulbs in half lengthwise and remove the tough core from each half.
