Ingredients

  • 1 large Fennel bulb
  • 2 cups Green cabbage
  • 2 medium Carrots
  • 2 tablespoons Fresh parsley
  • 0.5 cup Plain Greek yogurt
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Trim the ends of the fennel bulb, remove any tough outer layers, and cut the bulb in half lengthwise. Using a sharp knife or a mandoline, thinly slice the fennel into very fine shreds. Add to a large mixing bowl.

Step 2

Finely shred the green cabbage to measure 2 cups, and add it to the bowl with the fennel.

Step 3

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the mixing bowl.

Step 4

Finely chop the fresh parsley and sprinkle it over the vegetables in the mixing bowl.

Step 5

In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth and well combined.

Step 6

Pour the dressing over the fennel, cabbage, carrot, and parsley mixture. Toss everything together until the vegetables are evenly coated with the dressing.

Step 7

Taste and adjust the seasoning as needed, adding more salt, pepper, or lemon juice to your preference.

Step 8

Cover the bowl and refrigerate the coleslaw for at least 30 minutes to allow the flavors to meld together before serving.

Step 9

Serve the fennel coleslaw chilled as a refreshing side dish or use it as a topping for tacos, burgers, or sandwiches.
