Ingredients

  • 2 large Fennel bulb
  • 3 medium Oranges
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh mint leaves
  • 0.25 cup Pomegranate seeds (optional)

Directions

Step 1

Trim the fennel bulbs by removing the stalks and outer layer as needed. Slice the bulbs in half lengthwise and then thinly slice them using a knife or mandoline. Place them in a large salad bowl.

Step 2

Peel the oranges, removing as much of the white pith as possible. Slice the oranges crosswise into thin rounds or segments, and add them to the bowl with the fennel.
