Ingredients

  • 500 g Black beans
  • 2 L Water
  • 2 tbsp Olive oil
  • 250 g Smoked sausage (such as linguiça or chorizo)
  • 300 g Pork shoulder
  • 300 g Pork ribs
  • 150 g Bacon
  • 4 Garlic cloves, minced
  • 1 large Onion, diced
  • 2 Bay leaves
  • 1 Orange, sliced
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tbsp Chopped fresh parsley

Directions

Step 1

Rinse the black beans under cold water. Place them in a large bowl, cover with water, and soak overnight or at least 8 hours. Drain and set aside.

Step 2

In a large heavy-bottomed pot, heat the olive oil over medium heat. Add the bacon and cook until it's crispy. Remove the bacon and set it aside on a paper towel to drain.

Step 3

In the same pot, add the sliced sausage, pork shoulder, and pork ribs. Brown the meats on all sides. Remove them from the pot and set aside.

Step 4

Add the minced garlic and diced onion to the pot. Sauté until the onion is translucent.

Step 5

Return all the meats, including the bacon, to the pot with the onions and garlic.

Step 6

Add the soaked and drained black beans, bay leaves, and 2 liters of water to the pot. Stir to combine.

Step 7

Bring to a boil, then reduce the heat to low. Cover the pot and simmer for approximately 2-3 hours or until the beans are tender and the stew is thick and rich. Stir occasionally.

Step 8

Season with salt and black pepper to taste.

Step 9

Once cooked, remove the bay leaves before serving.

Step 10

Garnish with chopped parsley. Serve hot, accompanied by white rice and orange slices.
