Ingredients

  • 6 medium-sized yellow onions
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 6 cups beef or vegetable stock
  • 1 cup dry white wine
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 1 baguette
  • 2 cups grated Gruyère cheese
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and thinly slice the yellow onions into even slices, aiming for about 1/8-inch thickness.

Step 2

In a large, heavy-bottomed pot or Dutch oven, heat the butter and olive oil over medium heat until the butter is melted and bubbling.

Step 3

Add the sliced onions to the pot, stirring to coat them evenly in the butter and oil mixture. Reduce the heat to medium-low and cook, stirring occasionally, for 35–45 minutes until the onions become deeply caramelized and golden brown.

Step 4

Sprinkle the flour over the caramelized onions, stirring well to coat them. Cook for an additional 1–2 minutes to eliminate any raw flour taste.

Step 5

Slowly pour in the beef or vegetable stock and dry white wine, stirring constantly to prevent lumps.

Step 6

Add the bay leaves and thyme sprigs. Bring the soup to a gentle simmer, cover partially, and let it cook for 20 minutes. Stir occasionally.

Step 7

While the soup simmers, slice the baguette into 1-inch thick rounds and toast under the broiler until golden brown, 1–2 minutes per side. Set aside.

Step 8

Remove the bay leaves and thyme sprigs from the pot. Taste the soup and season with kosher salt and black pepper as needed.

Step 9

Preheat your oven's broiler. Ladle the soup into oven-safe bowls, leaving some space at the top.

Step 10

Place one or two toasted baguette slices on top of each bowl of soup. Generously sprinkle each with grated Gruyère cheese, covering the bread and spilling onto the soup surface.

Step 11

Carefully transfer the bowls to a baking sheet and place under the broiler for 2–4 minutes, until the cheese is melted, bubbly, and lightly browned.

Step 12

Serve immediately and enjoy a warm, comforting bowl designed to lift your spirits!
