Ingredients

  • 16 ounces fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 tablespoons unsalted butter
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch casserole dish.

In a large skillet over medium heat, melt the butter and sauté the diced onion until it becomes soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.
