  • 4 pieces Chicken thighs, bone-in and skin-on
  • 2 links Portuguese sausage (chorizo or linguiça)
  • 12 pieces Raw shrimp, peeled and deveined
  • 12 pieces Mussels, cleaned
  • 2 cups Jasmine rice
  • 4 cups Chicken stock
  • 4 pieces Garlic cloves, minced
  • 1 large Yellow onion, diced
  • 1 large Bell pepper, diced
  • 2 medium Tomatoes, diced
  • 2 teaspoons Sweet paprika
  • 1 teaspoon Turmeric powder
  • 2 pieces Bay leaves
  • 2 tablespoons Soy sauce
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 2 stalks Green onions, sliced (optional, for garnish)

Directions

Step 1

Season the chicken thighs with salt and ground black pepper. Set aside.

Step 2

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Add chicken thighs, skin-side down, and sear until golden and crispy, about 5 minutes per side. Remove and set aside.

Step 3

In the same pot, add the remaining 1 tablespoon of olive oil. Cook the diced onion, minced garlic, and diced bell pepper until softened, about 5 minutes.

Stir in the diced tomatoes, sweet paprika, turmeric powder, and bay leaves. Cook for another 2 minutes until the spices are fragrant.

Add the jasmine rice to the pot and stir to coat the grains with the vegetable and spice mixture.

Pour in the chicken stock and soy sauce. Bring the mixture to a simmer.

Return the seared chicken thighs to the pot, nestling them into the rice. Cover and reduce heat to low. Cook for 25 minutes.

While the rice and chicken are cooking, slice the Portuguese sausage into thin rounds and lightly brown them in a separate skillet. Set aside.

After 25 minutes, add the cooked sausage, raw shrimp, and cleaned mussels to the pot, placing them on top of the rice. Cover and cook for another 10 minutes, or until the shrimp turns pink and mussels open up.

Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
