Season the chicken thighs with salt and ground black pepper. Set aside.
Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Add chicken thighs, skin-side down, and sear until golden and crispy, about 5 minutes per side. Remove and set aside.
