Ingredients

  • 8 medium ripe tomatoes
  • 2 garlic cloves
  • 1 medium onion
  • 1 small carrot
  • 1 small celery stalk
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoon crushed red pepper flakes
  • 1 cup vegetable broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Wash and roughly chop the tomatoes. Set them aside.

Step 2

Peel and finely chop the garlic cloves, onion, carrot, and celery.

Step 3

In a large non-stick saucepan, add the chopped onion, carrot, and celery. Sauté over medium heat for 5 minutes using a few tablespoons of vegetable broth to prevent sticking. Stir occasionally.

Step 4

Add the chopped garlic and cook for an additional 2 minutes, stirring continuously.

Step 5

Add the chopped tomatoes to the saucepan. Allow them to cook for 5 minutes until they start to break down and release their juices.

Step 6

Stir in the tomato paste, oregano, basil, crushed red pepper flakes, salt, and black pepper. Cook for another 2 minutes to blend the flavors.

Step 7

Pour in the vegetable broth and bring the mixture to a gentle simmer. Reduce the heat to low, cover the saucepan, and let it simmer for 25-30 minutes. Stir occasionally to prevent sticking.

Step 8

Once the sauce has thickened, remove it from the heat. Use an immersion blender to blend the sauce until smooth, or let it cool slightly and blend in batches in a countertop blender. Adjust the thickness with additional vegetable broth if needed.

Step 9

Taste and adjust seasonings as necessary. If desired, garnish with freshly chopped parsley before serving.

Step 10

Use immediately or store the sauce in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
