Ingredients

  • 1.5 cups Rolled oats
  • 0.75 cups Whole wheat flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cups Raisins or dried cranberries
  • 0.25 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, ground cinnamon, and salt. Stir until evenly mixed.

Step 3

In a separate bowl, whisk together the unsweetened applesauce, honey (or maple syrup), and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.

Step 5

If using, fold in the raisins or dried cranberries and chopped walnuts.

Step 6

Scoop tablespoons of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon or your fingers.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the cookies are just set and lightly golden around the edges.

Step 8

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store in an airtight container at room temperature for up to 5 days.
