Ingredients

  • 2 cups Rolled oats
  • 2 medium Bananas (ripe, mashed)
  • 1 cup Unsweetened applesauce
  • 0.25 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped dried fruits (e.g., raisins, cranberries, apricots)
  • 0.25 cup Chopped nuts or seeds (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper or lightly spray with non-stick cooking spray.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth. Add the applesauce, honey or maple syrup, and vanilla extract. Mix well until combined.

Step 3

Stir in the rolled oats, cinnamon, and salt. Mix until the dry ingredients are evenly coated with the wet mixture.

Step 4

Fold in the dried fruits and optional nuts or seeds if using. Ensure they are evenly distributed throughout the mixture.

Step 5

Transfer the granola mixture to the prepared baking pan. Spread it out evenly and firmly press it down with a spatula or the back of a spoon.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden.

Step 7

Remove the pan from the oven and let it cool completely. Once cooled, transfer to a cutting board and slice into 12 bars or squares.

Step 8

Store in an airtight container at room temperature for up to 5 days, or refrigerate for a longer shelf life.
