Ingredients

  • 2 cups (shredded) Cabbage
  • 1 cup (shredded) Carrots
  • 3 stalks (chopped) Green onions
  • 1 teaspoon (grated) Ginger
  • 2 cloves (minced) Garlic
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Cornstarch
  • 10 sheets Egg roll wrappers
  • 1 tablespoon (for sealing wrappers) Water
  • 1 short spray (optional, for crispiness) Cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet or wok over medium heat, combine the shredded cabbage, shredded carrots, and chopped green onions. Cook for 4-5 minutes, stirring frequently, until the vegetables are slightly softened.

Step 3

Add the grated ginger and minced garlic to the skillet. Stir well and cook for an additional 1-2 minutes to release their flavors.

Step 4

In a small bowl, mix the soy sauce, rice vinegar, and cornstarch until smooth. Pour this mixture over the vegetable filling and stir to evenly coat the veggies. Cook for another 2 minutes, or until the mixture thickens slightly. Remove the skillet from heat and let the filling cool to room temperature.

Step 5

Place an egg roll wrapper on a clean surface in a diamond orientation (with one corner pointing toward you). Add 2-3 tablespoons of the cooled vegetable filling toward the center of the wrapper.

Step 6

Fold the bottom corner over the filling, then fold in the side corners tightly. Roll the wrapper upward to seal the egg roll. Use a dab of water to secure the top corner.

Step 7

Repeat this process with the remaining wrappers and filling.

Step 8

Place the prepared egg rolls seam side down on the lined baking sheet. Optionally, give them a light spray of cooking spray for extra crispiness.

Step 9

Bake in the preheated oven for 18-20 minutes, turning them halfway through for even crispiness. The egg rolls should be golden brown and firm.

Step 10

Remove the egg rolls from the oven and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauce, such as sweet chili or hoisin.
