Ingredients

  • 120 grams Cream cheese
  • 60 grams Unsalted butter
  • 2 tablespoons Coconut oil
  • 40 grams Chopped dark chocolate (70% or higher)
  • 2 tablespoons Almond flour
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Granulated erythritol (or other keto-friendly sweetener)
  • 30 grams Chopped nuts (optional, for topping)

Directions

Step 1

In a microwave-safe bowl, combine the cream cheese, unsalted butter, and coconut oil. Microwave the mixture in 20-second intervals until softened, stirring between intervals to ensure even heating.

Step 2

Add the granulated erythritol and vanilla extract to the bowl. Mix thoroughly until the sweetener is fully dissolved and the mixture is smooth.

Step 3

In a separate microwave-safe bowl, melt the chopped dark chocolate in 20-second intervals, stirring well to avoid burning.

Step 4

Pour the melted chocolate into the cream cheese mixture and stir well to combine. The mixture should have a consistent, smooth texture.

Step 5

Add the almond flour to the mixture for extra texture and mix well.

Step 6

Line a mini muffin tin or silicone mold with liners. Spoon the mixture evenly into each cavity, filling them about 3/4 of the way full.

Step 7

If desired, sprinkle the tops with chopped nuts for added crunch.

Step 8

Place the muffin tin or mold in the freezer for at least 30 minutes to allow the fat bombs to firm up.

Step 9

Once set, remove the fat bombs from the tin or mold and store them in an airtight container in the freezer. Serve chilled and enjoy!
