Ingredients

  • 8 pieces Chicken thighs (bone-in, skinless)
  • 1 cup Plain Greek yogurt
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1.5 tablespoons Tandoori masala powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Fresh cilantro (for garnish)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

In a large mixing bowl, prepare the marinade by combining Greek yogurt, lemon juice, minced garlic, grated ginger, tandoori masala powder, cumin, coriander, paprika, turmeric powder, and salt.

Step 2

Make shallow cuts into the chicken thighs to help the marinade penetrate. Add the chicken pieces to the bowl and coat them thoroughly with the marinade. Let the chicken marinate for at least 15 minutes (or up to 2 hours if you have more time).

Step 3

Preheat the oven broiler to high and line a baking sheet with aluminum foil. Lightly brush the foil with vegetable oil to prevent sticking.

Step 4

Arrange the marinated chicken pieces on the prepared baking sheet, ensuring they are evenly spaced.

Step 5

Broil the chicken for 10–12 minutes on one side. Then flip the pieces and broil for another 10–12 minutes, or until the chicken is cooked through and slightly charred on the edges. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Step 6

Remove the chicken from the oven and let it rest for 5 minutes.

Step 7

Garnish the chicken with freshly chopped cilantro and serve hot with lemon wedges on the side. Enjoy your fast Tandoori chicken with naan, rice, or a salad.
