Ingredients

  • 1 pound pork tenderloin
  • 3 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 0.33 cup unsalted roasted peanuts
  • 2 green onions, sliced
  • 2 tablespoons hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 4 servings cooked jasmine rice

Directions

Step 1

Slice the pork tenderloin into thin strips and place in a bowl. Add 1 tablespoon of soy sauce and the cornstarch. Stir to coat and set aside to marinate for 10 minutes.

In a small bowl, mix the remaining 2 tablespoons of soy sauce, hoisin sauce, rice vinegar, and sesame oil to create the stir fry sauce. Set aside.
