  • 2 tbsp Olive oil
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 0.5 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 Lime
  • 8 Flour tortillas
  • 0 Optional toppings: shredded cheese, sour cream, guacamole, salsa, shredded lettuce

Directions

Step 1

Slice the chicken breasts into thin strips and set aside.

Step 2

Cut the red bell pepper, green bell pepper, and yellow onion into thin strips.

Step 3

In a small bowl, mix together chili powder, paprika, cumin, garlic powder, salt, and black pepper to create the fajita seasoning.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 5

Add the chicken strips to the skillet and sprinkle half of the fajita seasoning over them. Cook for 5-6 minutes, stirring occasionally, until the chicken is fully cooked and slightly golden. Remove the chicken from the skillet and set aside.

Step 6

Add the remaining tablespoon of olive oil to the skillet. Toss in the bell peppers and onion strips, along with the remaining fajita seasoning. Stir and cook for 5-6 minutes until the vegetables are tender and slightly charred.

Step 7

Return the cooked chicken to the skillet and squeeze the juice of one lime over the mixture. Stir to combine and heat through for 1-2 minutes.

Step 8

Warm the flour tortillas either in the microwave, on a skillet, or directly over a gas flame for a few seconds on each side.

Step 9

Serve the chicken and vegetable mixture in warm tortillas. Top with your choice of shredded cheese, sour cream, guacamole, salsa, or shredded lettuce as desired.
