Ingredients

  • 1 lb Beef sirloin or flank steak
  • 3 tbsp Soy sauce
  • 2 tbsp Cornstarch
  • 2 tbsp Oyster sauce
  • 1 tbsp Dark soy sauce
  • 1 tsp Sugar
  • 1 tsp Sesame oil
  • 3 Garlic cloves, minced
  • 1 tsp Fresh ginger, minced
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 2 tbsp Vegetable oil
  • 1 cup Water
  • 2 Scallions, chopped
  • 1 tsp White or black pepper
  • 4 cups Cooked white rice (optional, for serving)

Directions

Step 1

Slice the beef into thin strips, about 2 inches long. In a bowl, mix the beef with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Set aside to marinate for 10 minutes.

Step 2

In a small bowl, prepare the sauce by combining 2 tablespoons soy sauce, oyster sauce, dark soy sauce, sugar, sesame oil, and 1/2 cup of water. Mix well and set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and cook for 2-3 minutes per side until browned. Work in batches if necessary. Remove the beef from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, stirring until fragrant, about 30 seconds.

Add the red and green bell peppers to the skillet. Stir-fry for 3-4 minutes until they start to soften but remain crisp.

Return the beef to the skillet. Stir in the prepared sauce and the remaining 1/2 cup of water. Sprinkle with white or black pepper to taste.

Let the mixture simmer for 2-3 minutes until the sauce thickens and coats the beef and vegetables. Add the remaining 1 tablespoon of cornstarch mixed with 1 tablespoon of water if the sauce needs more thickening.

Step 8

Remove from heat and stir in the chopped scallions.

Serve hot over steamed white rice, if desired.
