Ingredients

  • 1 piece Large flour tortilla
  • 2 pieces Eggs
  • 0.5 cup Shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tablespoon Butter
  • 0.25 cup Cooked bacon, sausage, or vegetables (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Crack the eggs into a small bowl. Add the salt and black pepper, then whisk until fully combined.

Step 2

Heat a medium-sized nonstick skillet over medium heat and add 1/2 tablespoon of butter. Once melted, pour in the whisked eggs and cook, stirring gently, until they are softly scrambled. Remove from the heat and set aside.

Step 3

Wipe the skillet clean and place it back over medium heat. Add the remaining 1/2 tablespoon of butter and let it melt.

Place the flour tortilla in the skillet. Sprinkle half of the shredded cheese evenly over one half of the tortilla.

Fold the empty half of the tortilla over the filling to create a half-moon shape. Press gently with a spatula to hold it together.
