Ingredients

  • 250 grams chickpea flour
  • 750 milliliters water
  • 60 milliliters extra virgin olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 tablespoon rosemary (optional)

Directions

Step 1

In a large mixing bowl, combine the chickpea flour and water. Whisk until smooth and free of lumps.

Add the salt and let the mixture rest for at least 2 hours at room temperature, allowing the flour to fully hydrate.

Step 3

After resting, preheat your oven to 220°C (430°F). Place a heavy-bottomed pizza tray or a shallow ovenproof skillet in the oven to heat as well.

Skim off any foam that has formed on the surface of the chickpea batter. Add half of the olive oil and stir gently to combine.

Carefully remove the hot pan from the oven, and pour in the remaining olive oil to coat the bottom.

Slowly pour the chickpea batter into the hot pan, swirling gently to distribute evenly.

Step 7

Sprinkle freshly ground black pepper over the top, and optionally, scatter rosemary leaves.

Step 8

Return the pan to the oven and bake for about 25 to 30 minutes, or until the farinata is golden brown and the edges are crispy.

Step 9

Remove from the oven and let cool slightly before slicing into wedges.

Step 10

Serve warm, garnished with additional rosemary if desired.
