Ingredients

  • 450 grams fresh spinach
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 2 cloves garlic cloves
  • 1 cup grated Parmesan cheese
  • 1 cup grated Gruyère cheese
  • 0.5 cups panko breadcrumbs
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons nutmeg

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the spinach and blanch for 1 minute. Drain the spinach and transfer it immediately to a bowl of ice water to cool. Once cooled, drain again and squeeze out as much liquid as possible. Roughly chop the spinach and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant, but not browned.

Step 4

Whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a smooth roux.

Step 5

Gradually whisk in the milk and heavy cream, cooking for 3-4 minutes until the mixture thickens and becomes creamy. Stir in half of the Parmesan cheese, all of the Gruyère cheese, salt, black pepper, and nutmeg. Mix until the cheese is melted and the sauce is smooth.

Step 6

Fold the chopped spinach into the cheese sauce until evenly coated. Transfer the mixture to a greased 1.5-quart baking dish.

Step 7

In a small bowl, toss the panko breadcrumbs with olive oil and the remaining Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the spinach mixture.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbling.

Step 9

Let the gratin rest for 5 minutes before serving. Enjoy hot as a side dish or a comforting main course.
