Ingredients

  • 1 lb salmon fillet
  • 2 tbsp olive oil
  • 1 whole lemon
  • 3 cloves garlic
  • 2 tbsp fresh parsley
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Place the salmon fillet skin-side down on the prepared baking sheet.

Step 3

Drizzle the olive oil evenly over the salmon.

Step 4

Zest the lemon, then slice it in half. Sprinkle the lemon zest over the salmon. Squeeze the juice from half the lemon over the fillet, reserving the other half for garnish.

Mince the garlic cloves and spread them evenly over the top of the salmon.
