Ingredients

  • 4 large Bell peppers (red, yellow, or orange)
  • 3 tablespoons Olive oil
  • 3 large Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Balsamic vinegar (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Wash the bell peppers thoroughly and pat them dry. Cut each bell pepper in half lengthwise, remove the seeds and membranes, and place them cut side down on the lined baking sheet.

Drizzle 2 tablespoons of olive oil over the bell peppers, ensuring they are lightly coated, and sprinkle with half of the salt and pepper.

Roast the bell peppers in the oven for 25-30 minutes, or until the skins are charred and blistered.
