Ingredients

  • 3 medium Carrots
  • 2 medium Zucchini
  • 2 medium Red bell peppers
  • 1 bunch Asparagus
  • 1 large Red onion
  • 3 tablespoons Olive oil
  • 3 pieces Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh thyme leaves
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and peel the carrots, then slice them into thin sticks. Wash the zucchini, cut off the ends, and slice it into half-moons. Core and slice the red bell peppers into strips. Trim the woody ends off the asparagus. Peel the red onion and slice it into wedges.

Step 3

Place all the prepared vegetables on a large baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt, black pepper, and thyme leaves. Toss to coat evenly.
