Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 4 cups milk
  • 1 cup heavy cream
  • 3 cups cheddar cheese, shredded
  • 1 cup gruyere cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp paprika
  • 1.5 cups panko breadcrumbs
  • 2 tbsp olive oil
  • 2 tbsp parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente according to package instructions. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to create a roux.

Step 4

Gradually pour in the milk and heavy cream, whisking constantly to avoid lumps. Cook for 5-7 minutes, or until the mixture thickens.

Step 5

Reduce the heat to low and stir in the cheddar, gruyere, and parmesan cheeses, one handful at a time. Reserve about 1/2 cup of cheddar for the topping. Stir until the cheese is fully melted and the sauce is smooth.

Step 6

Season the cheese sauce with salt, black pepper, and paprika. Taste and adjust seasoning as desired.

Step 7

Add the drained macaroni to the cheese sauce and stir until the pasta is evenly coated.

Step 8

Transfer the macaroni and cheese mixture to a greased 9x13-inch baking dish. Spread it out evenly.

Step 9

In a small bowl, combine the panko breadcrumbs with olive oil, tossing to coat. Sprinkle the breadcrumb mixture evenly over the mac and cheese. Top with the reserved cheddar cheese.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 11

Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley, if desired.

Step 12

Serve warm and enjoy your homemade Family Mac and Cheese!
