Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp soy sauce
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil
  • 4 green onions, thinly sliced
  • 1 tbsp fresh ginger, minced
  • 2 garlic cloves, minced
  • 4 cups shredded coleslaw mix
  • 1 cup shiitake mushrooms, thinly sliced
  • 3 tbsp hoisin sauce
  • 2 large eggs
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 8 flour tortillas or Chinese pancakes (optional for serving)

Directions

Step 1

Cut the chicken breasts into thin strips and place them in a medium bowl. Add 2 tablespoons of soy sauce and 2 teaspoons of cornstarch to the bowl. Toss well to coat, then set aside to marinate for 10 minutes.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes, or until cooked through. Remove the chicken from the pan and set aside on a plate.
