  • 15 oz Canned chickpeas
  • 1 cup Fresh parsley

  • 3 tablespoons All-purpose flour

  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Vegetable oil (for frying)
  • 6 pieces Pita bread
  • 1 cup Cucumber
  • 1 cup Tomatoes
  • 1 cup Lettuce
  • 0.5 cup Tahini sauce

Directions

Step 1

Drain and rinse the canned chickpeas thoroughly. Pat them dry with a paper towel to remove as much excess moisture as possible.

In a food processor, combine the chickpeas, parsley, cilantro, garlic, and red onion. Pulse until you have a rough, crumbly mixture.

Add the flour, ground cumin, ground coriander, baking powder, salt, and black pepper to the food processor. Pulse until the mixture comes together and you can easily form small patties or balls. Avoid over-processing so the mixture doesn’t become too smooth.
