Directions

Step 1

Place the dried chickpeas in a large bowl and cover them with water. Let them soak overnight, or for at least 12 hours. The chickpeas will double in size.

Drain and rinse the soaked chickpeas, then transfer them to a food processor.

Add the onion, garlic cloves, parsley, cilantro, cumin, coriander, and salt to the food processor. Pulse the mixture until it resembles a coarse meal. The mixture should hold together when pinched between your fingers.
