  • 2 pieces Boneless, skinless chicken breasts
  • 3 pieces Bell peppers (red, green, yellow)
  • 1 large Red onion
  • 2 tablespoons Olive oil
  • 2 tablespoons Fajita seasoning mix
  • 4 Large flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 2 tablespoons Butter
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Guacamole (optional, for serving)
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Slice the chicken breasts into thin strips. Set aside.

Slice the bell peppers and red onion into thin strips.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and sprinkle with 1 tablespoon of fajita seasoning. Cook for 5-6 minutes or until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
