Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced

  • 1 medium zucchini, diced
  • 200 grams button mushrooms, sliced
  • 100 grams baby spinach
  • 400 grams canned chickpeas, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 120 grams crème fraîche
  • 100 grams cheddar cheese, shredded
  • 1 sheet ready-made shortcrust pastry
  • 1 large egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Heat the olive oil in a large skillet over medium heat.

Add the diced onion and sauté for 3-4 minutes, until softened.

Stir in the minced garlic, diced carrot, zucchini, and mushrooms, cooking for 5-7 minutes until the vegetables are tender.
