Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 large Yellow bell pepper
  • 1 large Onion
  • 3 tbsp Olive oil
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Lime juice
  • 8 small Flour tortillas
  • 0.5 cup Sour cream
  • 0.5 cup Shredded cheese
  • 2 tbsp Chopped cilantro
  • 0.5 cup Guacamole
  • 0.5 cup Salsa

Directions

Step 1

Slice the chicken breasts into thin strips and set aside.

Step 2

Cut the red, green, and yellow bell peppers into thin strips, and slice the onion thinly.

Step 3

In a small bowl, combine chili powder, cumin, paprika, garlic powder, salt, and black pepper to make a seasoning mix.

Step 4

In a large mixing bowl, toss the chicken strips with 1 tablespoon of olive oil, half of the seasoning mix, and lime juice until evenly coated. Set aside to marinate for 10 minutes.

Step 5

Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.

Add the marinated chicken to the pan and cook for 5-7 minutes until fully cooked and browned. Remove the chicken from the pan and set aside.

Warm the flour tortillas in a dry skillet or the microwave for 30 seconds before serving.
