Ingredients

  • 500 g Mixed dried fruits (e.g., raisins, sultanas, currants, chopped dates)
  • 150 g Unsalted butter
  • 200 g Brown sugar
  • 250 ml Water
  • 2 tbsp Honey
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.5 tsp Ground ginger
  • 250 g All-purpose flour
  • 1 tsp Baking powder
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 50 g Almonds (optional, chopped)
  • 2 tbsp Brandy (optional, for soaking or brushing)

Directions

Step 1

Grease and line a 20cm (8-inch) round cake tin with parchment paper.

Step 2

In a large saucepan, combine the mixed dried fruits, butter, brown sugar, water, honey, cinnamon, nutmeg, and ginger. Bring to a boil over medium heat, stirring occasionally, then reduce the heat and simmer for 5 minutes. Remove from heat and allow the mixture to cool to room temperature.

Preheat your oven to 150°C (300°F).

In a mixing bowl, sift together the all-purpose flour and baking powder.

Add the cooled fruit mixture to the dry ingredients, folding gently to combine.
