Ingredients

  • 4 medium Carrots (peeled and sliced into 1-inch pieces)
  • 3 medium Russet potatoes (peeled and cut into chunks)
  • 2 stalks Celery stalks (sliced)
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 0.5 cup Red wine (optional)
  • 2 Bay leaves
  • 1 teaspoon Fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper, then sprinkle with flour and toss to coat evenly.

Heat olive oil in a large skillet over medium-high heat. Sear the beef cubes in batches, about 2 minutes per side, until browned. Transfer seared beef to the crock pot.
