Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 3 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 1 cups Chicken broth
  • 0.5 cups Fresh lemon juice
  • 2 tablespoons Lemon zest
  • 2 tablespoons Capers, drained
  • 2 tablespoons Fresh parsley, chopped
  • 8 slices Lemon slices

Directions

Step 1

Place each chicken breast between two pieces of plastic wrap and pound to an even 1/2-inch thickness using a meat mallet or rolling pin.

Step 2

In a large shallow dish, mix the all-purpose flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off excess.

Step 3

Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, add the chicken breasts in batches and cook for 3-4 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.

Step 4

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter to the skillet. Add the minced garlic and sauté for 1 minute until fragrant.

Step 5

Deglaze the skillet by pouring in the chicken broth, scraping up any browned bits on the bottom of the pan with a wooden spoon.

Step 6

Stir in the lemon juice, lemon zest, and capers. Cook the sauce for 2-3 minutes, allowing it to reduce slightly.

Step 7

Return the chicken breasts to the skillet, spooning the sauce over them. Top with lemon slices and let simmer for 2 minutes to marry the flavors.

Step 8

Garnish with freshly chopped parsley and serve immediately. Pair with pasta, rice, or crusty bread to soak up the vibrant sauce.
