Preheat the oven to 180°C (350°F).
In a food processor, pulse the Oreo cookies until finely crushed. In a bowl, combine the crushed cookies with melted butter until evenly coated.
Press the cookie mixture firmly into the bottom and up the sides of a 9-inch (23 cm) pie dish to form the crust. Bake for 8 minutes, then set aside to cool completely.
To make the ganache layer, heat 250 ml heavy cream in a saucepan over medium heat until it just begins to simmer. Remove from heat and pour over 300 g chopped dark chocolate. Let sit for 2 minutes, then stir until smooth.
Pour half of the ganache into the cooled crust, spreading it evenly. Reserve the remaining ganache for topping. Chill the crust with ganache in the refrigerator while preparing the filling.
For the filling, in a medium saucepan, whisk together 100 g granulated sugar, 30 g cocoa powder, and 20 g cornstarch. Gradually whisk in 300 ml heavy cream and 200 ml whole milk until smooth.
Heat the mixture over medium heat, stirring constantly, until it begins to thicken and bubble. Reduce the heat and cook for 2 minutes more, continuing to stir.
Remove from heat and stir in 200 g chopped dark chocolate and 2 tsp vanilla extract until the chocolate is completely melted and the mixture is smooth.
Let the filling cool slightly, then pour it over the chilled ganache layer in the crust. Smooth the top and refrigerate for at least 4 hours, or until set.
Once set, spread the reserved ganache over the top of the pie, creating a smooth finish. If desired, top with whipped cream and chocolate shavings for garnish.
