Ingredients

  • 2.5 pounds Russet potatoes
  • 8 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 0.5 cup Whole milk
  • 4 ounces Cream cheese
  • 2 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks, about 1-2 inches in size. Rinse them under cold water to remove excess starch.

Step 2

Place the potato chunks in a large pot and cover with cold, salted water. Bring the water to a boil over medium-high heat, then reduce to medium and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes are cooking, warm the heavy cream and whole milk together in a small saucepan over low heat. Keep warm but do not let it boil.

Step 4

Drain the cooked potatoes thoroughly and return them to the pot. Place the pot back on the stovetop over low heat for 1-2 minutes to evaporate any remaining moisture, stirring occasionally to prevent sticking.

Step 5

Add the butter, cream cheese, 1 teaspoon of salt, and 1/4 teaspoon of ground black pepper to the potatoes. Using a potato masher or ricer, mash the potatoes until smooth and creamy.

Step 6

Slowly pour in the warm cream and milk mixture, a little at a time, while continuing to mash or stir. Add only as much liquid as needed to achieve your desired consistency. Taste and adjust the seasoning with the remaining salt and pepper as necessary.

Step 7

Transfer the mashed potatoes to a serving dish and garnish with freshly chopped parsley, if desired. Serve immediately while warm.
