Ingredients

  • 400 ml coconut milk
  • 200 ml whole milk
  • 75 g granulated sugar
  • 30 g cornstarch
  • 150 g ripe mango (pureed)
  • 0.25 tsp cardamom powder
  • 1 tsp vanilla extract
  • 2 tbsp toasted coconut flakes
  • 4 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the coconut milk and whole milk. Place the saucepan over medium heat and stir occasionally to prevent scorching.

Step 2

In a small mixing bowl, combine the cornstarch and a few tablespoons of the milk mixture to create a smooth slurry. Set aside.

Step 3

Once the milk mixture begins to warm, add the granulated sugar and stir until it has dissolved completely.

Step 4

Lower the heat to medium-low and slowly whisk in the cornstarch slurry. Continue to whisk constantly to avoid lumps forming.

Step 5

Cook the mixture for 8-10 minutes, stirring constantly, until it thickens to a creamy pudding consistency. It should coat the back of a spoon.

Step 6

Remove the saucepan from heat and stir in the mango puree, cardamom powder, and vanilla extract until well combined.

Step 7

Pour the pudding into four serving dishes or ramekins. Allow it to cool to room temperature before covering and refrigerating for at least 2 hours to set.

Step 8

Before serving, top each pudding with a sprinkle of toasted coconut flakes. Garnish with a fresh mint leaf if desired.
