Ingredients

  • 2 lbs pork tenderloin
  • 1 tbsp fresh ginger
  • 3 cloves garlic cloves
  • 0.25 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tsp orange zest
  • 0.33 cup coconut milk
  • 0.25 tsp cayenne pepper
  • 0.25 tsp ground cinnamon
  • 0.5 tsp crushed black pepper
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp fresh cilantro

Directions

Step 1

Rinse the pork tenderloins under cold water and pat them dry with paper towels. Trim any excess fat or silver skin.

Step 2

Grate the fresh ginger and mince the garlic cloves. In a medium-sized bowl, combine the ginger, garlic, soy sauce, honey, lime juice, orange zest, coconut milk, cayenne pepper, ground cinnamon, crushed black pepper, and salt.

Step 3

Place the pork tenderloins in a large resealable plastic bag or a shallow glass dish. Pour the marinade over the pork, ensuring all surfaces are coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Step 4

Preheat your oven to 375°F (190°C). Remove the pork tenderloins from the marinade and pat them dry with paper towels. Reserve the marinade for later use.

Step 5

In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork tenderloins for 2-3 minutes on each side until browned and caramelized.

Step 6

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Remove the skillet from the oven and tent the tenderloins with aluminum foil. Allow them to rest for 5-7 minutes.

Step 7

While the pork is resting, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce the heat to a simmer. Cook for 5-7 minutes until the marinade thickens into a glaze.

Step 8

Slice the pork tenderloins into medallions and drizzle with the citrus glaze. Garnish with freshly chopped cilantro before serving. Enjoy your Exotic Pork Tenderloin!
