  • 4 cups Chicken broth
  • 2 4-ounce cans Canned green chilies, diced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground cayenne pepper
  • 3 15-ounce cans White beans, drained and rinsed
  • 1 cup Sour cream
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded Monterey Jack cheese (for garnish)
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 1 bag Tortilla chips (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Add the chicken breasts and cook for about 6-8 minutes, flipping halfway, until golden brown on each side and fully cooked through. Remove from the pot and set aside to rest.

In the same pot, add the diced onion and sauté for 4-5 minutes until softened and translucent.
