Ingredients

  • 1 head (medium, about 1.5 lbs) green cabbage
  • 2 tablespoons butter
  • 1 large, finely chopped onion
  • 1 medium, grated carrot
  • 0.5 cup water
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon (optional) dill (fresh, chopped)

Directions

Step 1

Remove the outer leaves of the cabbage if they are damaged or dirty. Cut the cabbage into quarters, remove the core, and slice the quarters into thin strips.

Step 2

In a large skillet or Dutch oven, melt the butter over medium heat.

Step 3

Add the chopped onion and sauté for 3–4 minutes, until soft and translucent.

Step 4

Stir in the grated carrot and cook for another 2 minutes.

Step 5

Add the sliced cabbage to the skillet, stirring well to combine it with the onion and carrot mixture.

Step 6

Pour in the water and cover the skillet with a lid. Reduce the heat to low and let the cabbage simmer gently for 20 minutes, stirring occasionally.

Step 7

After 20 minutes, stir in the apple cider vinegar, sugar, salt, and black pepper. Taste and adjust the seasoning as needed.

Step 8

Continue cooking uncovered for another 20–25 minutes, stirring occasionally, until the cabbage is tender and lightly caramelized.

Step 9

If desired, stir in fresh chopped dill just before serving for added flavor.

Step 10

Serve warm as a side dish with meats or potatoes, or enjoy it as a vegetarian main course.
