Ingredients

  • 500 g Chicken thighs (boneless, skinless)
  • 1 shot Espresso shot
  • 75 g Ruby chocolate
  • 200 ml Coconut milk
  • 2 tbsp Soy sauce
  • 3 tbsp Peanut butter (creamy)
  • 1 tbsp Lime juice
  • 1 tbsp Brown sugar
  • 2 cloves Garlic cloves (minced)
  • 1 piece Red chili (finely chopped)
  • 1 tbsp Vegetable oil
  • 1 tsp Ground coriander
  • 0.5 tsp Salt
  • 8 pieces Wooden skewers (soaked in water)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside in a medium bowl.

Step 2

In a small mixing bowl, combine soy sauce, ground coriander, minced garlic, half of the lime juice (reserve the rest), and 1/2 tsp of brown sugar. Mix well and pour the marinade over the chicken. Let it marinate for at least 15 minutes.

Thread the marinated chicken pieces onto the soaked wooden skewers.

Heat a grill pan or outdoor grill over medium heat. Brush with vegetable oil, then place the skewers on the grill. Cook for 4-5 minutes per side, or until the chicken is fully cooked and slightly charred. Set aside and keep warm.
